There are certain cardinal rules required to get the ideal result when making this "yummy" treat. First, prepare everything in advance including a parchment paper lined baking sheet. Choose big, juicy berries that are perfect and dry them completely after carefully rinsing. Berries should be at room temperature before they are dipped into the chocolate.
Good quality chocolate is worth the splurge. Adding butter when melting the chocolate improves the consistency and makes for a smoother, creamier chocolate shell. Melt in a double boiler to avoid lumps. Immediately refrigerate the strawberries after dipping and remove from the refrigerator when the shell has hardened. You can use milk, dark or white chocolate or a combination depending on your honey's personal preference.
The following is a great chocolate-covered strawberry recipe:
- 1/2 lb. good quality milk, dark or white chocolate
- 1 lb. Large perfect strawberries with leaves left on
- 2 tsps. butter or shortening of your choice
Melt the chocolate and butter or shortening in a double boiler and stir until smooth. Remove from heat. Holding each strawberry by the stem dip into the chocolate ,shake off excess chocolate and set on the prepared baking sheet. When all the berries have be dipped, refrigerate for about 1/2 hour or until the chocolate shell is solid.
Remove strawberries from the refrigerator, place in an airtight container and store in a cool place until ready to serve.
