Daddy Jeff’s Out of This World Pancakes

There is nothing my girls look forward to more than weekend pancakes.  They gather around the kitchen and watch as I whip up a batch of their favorite breakfast treats. I love to see their smiling faces as they eagerly wait to see what this week will bring as I cut them into different fun shapes – their favorite is Star Wars.

Ingredients:

 

  • 3/4 Cup Milk
  • 2 Tablespoons white vinegar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons white sugar
  • 1 egg
  • 2 tablespoons butter melted
  • Non stick cooking spray
  • Toppings to suit (bananas, berries,whipped cream)
  • Cookie or sandwich cutters for fun shapes
Directions:

Combine milk and vinegar in a bowl and set aside for 5 minutes for the milk to sourstar wars pancakes

In a large bowl combine flour, sugar, baking powder, baking soda and salt

Whisk egg and melted butter into soured milk and combine with flour mixture

Whisk until lumps are gone. If you are feeling adventurous you can even add chocolate chips or bananas right into the batter

Heat a large skillet on medium heat and coat with cooking spray. Pour 1/4 cupfuls of batter into skillet and cook until bubbles appear on surface. Flip and cook until both sides are browned.

To cut into fun shapes I use sandwich cutters from www.williams-sonoma.com

Add toppings too if desired
