Everyone has a favorite side when it comes to Thanksgiving, some love stuffing, while others desire cranberry sauce, but for me the day would not be complete without my mother's sweet potato casserole with marshmallows. While I love almost everything about Thanksgiving, there is just something in this comfort food that makes it special and crave-able. It's a dish I look forward to as soon as the leaves start to change into their Autumn beauty.
Mashed Sweet Potato Casserole with Marshmallows
- 1(40 ounce) can cut yams, drained (I use BRUCE)
- 1/2 cup light brown sugar
- 1/4 tsp sea salt
- 1/2 tsp ground cinnamon_
- 4 oz half and half
- 4 tbls melted salted butter
- 1-16 oz bag miniature marshmallows
Pre-heat oven to 350 degrees. Butter a 1 quart baking dish.
Mash yams in a large bowl and add brown sugar, salt, cinnamon, cream, and melted butter. Mix well. Place 1/2 mixture in baking dish. Top with a layer of marshmallows, then add remaining mixture. Bake for 30 minutes. Remove from oven and top with remaining marshmallows. Bake for another 10 minutes or until marshmallows are lightly browned.
