Every foodie has their family favorites whether it their mom’s chicken soup or their uncle’s special chili. There is something about these recipes that evoke not only great aromas and flavors, but replicates warm feelings of meals and events shared with friends and loved ones.

“THE RECIPE” in our clan is a delicious blueberry buckle that my mom has been making for as long as I can remember.  So here is Nana Fay’s signature dessert for my cousins and friends that have literally begged for the recipe. Enjoy!

Blueberry Buckle

Preheat oven to 350 degrees F.blueberry cake

The Cake

  • ¾ cup granulated sugar
  • ¼ cup softened butter
  • 1 egg
  • ½ cup milk
  • 2 cups sifted all purpose flour
  • 2 tsps. baking powder
  • ½ tsp. salt
  • 2 cups blueberries, washed and drained
  • 1 tbs. of confectioners sugar

The Streusel

  • ½ cup granulated sugar
  • 1/3 cup sifted flour
  • ½ tsp. cinnamon
  • ¼ cup softened butter

Mix all Streusel ingredients together in a separate bowl.

Mix sugar, butter and egg together thoroughly.  Stir in milk.

Sift together flour, baking powder and salt. Blend into the sugar and butter mixture thoroughly.  Roll the washed and dried blueberries in a tablespoon of confectioner’s sugar and carefully fold into the cake mixture.

Pour batter into a greased and floured 9” inch square pan.  Sprinkle with the Streusel topping.

Bake for 45 to 50 minutes or until a wooden pick thrust into the center of the cake comes out clean.

Yields nine, 3 inch squares
