  • ¾ cup granulated sugar
  • ¼ cup softened butter
  • 1 egg
  • ½ cup milk
  • 2 cups sifted all purpose flour

  • ½ tsp. salt
  • 2 cups blueberries, washed and drained
  • 1 tbs. of confectioners sugar

The Streusel

  • ½ cup granulated sugar
  • 1/3 cup sifted flour

  • ¼ cup softened butter

Mix all Streusel ingredients together in a separate bowl.

Mix sugar, butter and egg together thoroughly.  Stir in milk.

Sift together flour, baking powder and salt. Blend into the sugar and butter mixture thoroughly.  Roll the washed and dried blueberries in a tablespoon of confectioner’s sugar and carefully fold into the cake mixture.

Pour batter into a greased and floured 9” inch square pan.  Sprinkle with the Streusel topping.

Bake for 45 to 50 minutes or until a wooden pick thrust into the center of the cake comes out clean.
