The Heart And Soul Of Chef Chris Coleman

chef chris colemanWalking into Petaluma on the Upper Eastside of New York is always a treat, but meeting it’s Executive Chef , Chris Coleman defines the focus, passion and as his friends say, the flamboyance that creates his delicious food.

Chef Chris blends his half Panamanian and half Jamaican heritage together to deliver consistently great dishes. He began cooking as a boy in his mother Bette Elizabeth’s kitchen, where he started adding his own soulful style into her already exceptional cooking.  Bette also taught Chris focus and determination and that is what led him to be a Golden Gloves boxing champion, as well as a winner on the Food Network show “Chopped”.

I recently attended a “Spring in the Mediterranean” luncheon that highlighted Chef Coleman’s love of cooking.  Each dish although traditional, had the added passion that only someone who loves preparing food could impart.

We started with a juicy and flavorful bruschetta, which had diced tomato, fresh garlic and onions and fresh basil over a crunchy crostini.

Next we enjoyed Chef Chris’s unique homemade meatballs, served in a marinara sauce and topped with ricotta salata cheese, adding a tangy finish to an already perfect bite.

Onto perfectly seared octopus with potatoes and olives and herbs in a lemon vinegar. These appetizers set the stage for the entrees, which  highlighted Chef Colman’s love of preparing seafood.

Our first entree was his signature Pan Seared Day Boat Scallops wrapped in bacon and served on top of perfectly seasoned, wood-roasted vegetables.  For me, this was one of the stars of the day as only a master chef can prepare a perfectly cooked scallop.

The two pasta courses were seafood capellini, made with clams, mussels, shrimp, calamari and more of the excellent marinara sauce, as well as homemade spinach and ricotta raviolis in a dreamy black truffle sauce.  This was also one of my personal favorites.

Dessert was a light plate of mixed berries and a crème fraiche-a delicate ending to top off the perfect lunch.

Petaluma and Chef Chris Coleman consistently get rave reviews and now I can add to those raves!
