The Twelve Days of Cookies

Christmas and cookies are synonymous, so we are bringing you the twelve days of our favorite cookie recipes to enjoy and share with family and friends during this joyous time of year.

On the twelfth day of cookies my mother made for me, delicious Almond Crescents.  This is one of my favorite holiday recipes and a great addition to your cookie jar any time of the year.

 12 days of cookies

ALMOND CRESCENTS

Yields about 4 dozen

  • 2 sticks unsalted butter, softened
  • 1/3 cup sugar
  • 2/3 cup ground almonds
  • 1-2/3 cups of all purpose flour
  • ½ cup confectioner’s sugar
  • pinch of salt

Directions:

Preheat oven to 325 F

Beat the butter and sugar until it is pale and fluffy.  Stir in the almonds, salt and flour.  Wrap the dough in waxed paper and chill until firm.

Shape teaspoons of the dough into crescents and place on an ungreased baking sheet. Bake 15 minutes until slightly firm to the touch. Do not allow them to color at all. Remove from the oven and cool for a few minutes on a wire rack.  Roll in confectioner’s sugar. Cool completely. Enjoy!
