Chimichurri

I love Chimichurri sauce, the flavor, the texture, even the name itself is fabulous. After spending some time in Buenos Aires I have been searching for a restaurant that duplicates the authentic dishes of Argentina, but the lack of choices in Manhattan truly puzzles me.
If you are craving an Argentinean steak, here is a great recipe to make your own Chimichurri at home:
  • 1 cup (packed) fresh flat leaf parsley
  • 3/4 cup olive oil
  • 1/8 cup red wine vinegar
  • 1/4 cup (packed) fresh cilantro
  • 7 garlic cloves, peeled
  • 3/4 teaspoon dried crushed red pepper
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
Puree all ingredients in a food processor and blend until smooth. Transfer to bowl. Cover and let stand at room temperature. Great on steak, or chicken too!
